Double Chocolate Chip Muffins

2 cups of flour

1/2 cup of cocoa powder

1 TBSP + 1 tsp of baking powder

1/2 tsp salt

1 cup of sugar

1/2 cup of melted butter or oil

2 eggs (room temperature)

1 1/4 cup of milk

1 TBSP vanilla

1 1/2 cup of chocolate chips

Preheat oven to 425 F (218C)

Add the dry ingredients together and whisk, flour, cocoa, baking powder, salt

Add the wet ingredients in a separate bowl, butter, sugar, eggs, milk, vanilla

Combine the wet and dry ingredients into one bowl

Fold in the chocolate chips

Line a jumbo 6 cup muffin tin

Fill each cup to the very top slightly domed gives it that signature bakery style

Add extra chocolate chips on top

bake for 6-7 minutes at 425F

Reduce to 350F (177C) for 18 minutes

Muffins are done when the toothpick comes out with moist crumbs not dry
